Ingredients for 6 people: 250g
biscuits, 700g of chestnut cream with vanilla, 300g Marrons glacйs, 4 sheets of gelatin 400g cream 5cl Whisky, 25 cl of water, 200g of sugar.
Preparation:
Soak the gelatin in cold water. Put in a saucepan the sugar and water and boil until obtaining a syrup. Allow to cool. Pour in the syrup halves of whiskey to make it longer. Take a charlotte mold and line bottom and sides with ladyfingers soaked in syrup. Mash coarsely 200g Marrons glacйs, mix with the chestnut puree and flavor with the rest of the whiskey. Heat 1 / 4 of cream, remove from heat. Remove the gelatine from the water, squeeze it between your hands, let it melt in the hot cream. Allow to cool. Assemble the remaining cream. Mix the purée with the lukewarm gelatin and whipped cream. Pour the mixture into mold and refrigerate for 12 hours. Remove from the mold and place on a plate. Serve with the rest of the marron glacйs or with English custard.
